Colicchio and Ortuzar opened the first in their fast-casual sandwich shop concept in 2003. With decades of fine dining restaurant experience between them, ’Wichcraft was conceived as the perfect post-shift chef meal – delicious scraps of the best cuts of meat and local produce piled high between two pieces of bread.
